Stir Fried Mongolian Rice Noodles

Ingredients
- 400g Packet Rice vermicelli
- 350g Chicken breast fillet chopped
- 2 tbs Garlic chopped
- 1 tbs Ginger chopped
- 250g Carrot shredded
- 100g Bok choy shredded
- 250g Leeks shredded
- 5 Eggs
- 1/2 Cup oil
- 10 Red chilli sliced
- 150g Spring onion leaves
Method
Boil three pints water and pour over the rice sticks, cover and set a side for five minutes; strain the noodles. In a wok heat oil add garlic, ginger and fry. Add marinated chicken and fry in high heat, add sauce and mix carrot, leeks and beaten eggs. Add the boiled and cooled noodles, mix well. Lastly add red chillies and spring onion leaves.
Chicken Marinade
- 2 tbs Sriracha sauce
- 1 tbs Sesame oil
- 1 tbs Soy sauce
- 1/2 tsp Salt
- Mix with chicken and set a side
- Mix the ingredients gien below to make the sauce and set aside.
- 1/4 cup Soy sauce
- 4 tbs Oyster souce
- 1 tbs Fish souce
- 3 tbs Chilli flakes
- 1 tbs Sugar

Stir Fried Pork
Ingredients
- 750g Pork or Beef fillet sliced
- 2 tbs Corn flour dust on pork slices
- 1 Red pepper chilli
- 1 Green pepper chilli
- 2 B onions
- 4 tbs Sesame seeds roasted
- 1/4 Cup oil
- 2 tbs Garlic paste
- 1 tbs Ginger paste
- 2 tbs Sriracha sauce
Method
- Marinate the meat with 4 tbs of marinade sauce mix and set aside for 1-2 hours.
- Heat a wok with oil and fry the meat in batches and take out and clean the wok.
- Heat the wok, add oil, garlic paste, ginger paste, black pepper, sriracha sauce, fried meat and remaining marinade sauce and cook for 1-2 minutes. Add vegetables and roasted sesame seeds.
- Serve with braised bok choy.
Marinade sauce mixed in a bowl
- 3 tbs Hoisin sauce
- 4 tbs Soy sauce
- 2 tbs Rice vinegar
- 2 tbs Sesame oil
