Mexican Style Roast Chicken

Ingredients 

  • 1kg Whole Chicken
  • 500g Corn Kernels
  • 1 Red Pepper
  • 400g Potatoes par - boiled
  • 3tbs Lemon Juice
  • 2tsp Salt
  • 80ml Olive Oil
  • 100g Melted Butter
  • 2tbs Oregano
  • 3tbs Orange Juice

 

Mexican Spice Mix (add into a bowl)

  • 1tbs Coriander Powder
  • 1tsp Cumin Powder
  • 1tsp Cinnamon Powder
  • 1tsp Chilli Powder
  • 1tsp Pepper Powder
  • 1tsp Oregano Powder

 

Method

  • Into the spice bowl, add olive oil, lemon juice, 2tbs Worcestershire   sauce, salt, oregano; mix and set aside.
  • Wash and pat dry the chicken, brush butter, orange juice inside and outside the chicken, cut a large lemon into three and place inside the cavity of the chicken.
  • With a brush apply the mexican spice mix inside and outside  the chicken, place on a foil and wrap and place on a baking tray for 2 - 3 hours.
  • Pre - heat the oven to 2000c for ten minutes. Place the chicken in the oven and bake for 30 minutes, covered.
  • Remove the tray, open the foil, place corn and potatoes on the side of the chicken.
  • Brush olive oil over the chicken and bake for further 30 minutes

 

Meat Balls in Hot Tarco Sauce

Hot Traco Sauce

Ingredients 

  • 1 cup Tomato Puree
  • 3tbs Tomato Sauce
  • 1tbs Garlic Chopped
  • 2tbs Hot Pepper Sauce
  • 3tbs Capsicums Finely Chopped
  • 2tbs Onion Chopped
  • 1tbs Sugar
  • 4tbs Oil
  • 1tsp Chilli Powder
  • 1tsp Salt

 

Method

Heat oil in a pan, add garlic, capsicums, onion and fry, add rest of the ingredients and cook for 8 - 10 minutes. Serve with meat balls.

Ingredients 

  • 500g Minced Chicken, Beef or Pork
  • 1 cup Fresh Bread Crumbs
  • 1tsp White Pepper
  • 1tsp Salt
  • 2tbs Worcestershire Sauce
  • 1tbs Celery Chopped
  • 1tbs Parsley Chopped
  • 1 Onion Chopped
  • 1tsp Garlic Chopped
  • 1 Egg

 

Method

  • Heat two tablespoons oil in a pan, fry garlic, onion, celery and parsley. In a bowl mix minced meat, fried ingredients and the rest of the above ingredients.
  • Make the mixture into small balls and roll in four tablespoons flour. Heat quarter cup oil in a pan and fry the meatballs, take off the pan.
