Quick breakfast ideas

If you are like me, then, you would really enjoy these pre prepared / quick breakfast ideas. Due to Covid-19 most of us are either working from home or at home completely. You might be loaded with household chores that keep you up till late and you just want to sleep in a little. On days like these I find it difficult to wake up to make our usual Lankan breakfast options. So here is my take on two easy and quick breakfast ideas.

Lazy omelette

What you need

  • 3 eggs
  • One cup of vegetables of your choice.
  • Salt and pepper to taste
  • Butter or olive oil for frying.
  • Why I call it lazy omelet is because there is no cutting involved. So my go to vegetables for the omelet are onions, green chilies, tomatoes, mushrooms and cauliflower.

Step 1
Beat 3 eggs add salt and pepper to taste. Leave it aside for later.

Step 2
Use a magic bullet or food processor and pulse the vegetables of your choice, just one quick pulse. So that the vegetables are pureed but just right 
in size.

Step 3
In a frying pan, drizzle some olive oil and when it is just heating up add the vegetables and cook it for 1 min. Next add your beaten eggs and let it cook. Don’t forget to close the pan with a lid to cook your eggs sooner.
