Strawberry Steam Cake

Ingredients

  • 200gr Strawberries sliced
  • 250gr Flour
  • 200gr Butter
  • 200gr Sugar
  • 2tsp Baking powder
  • 1tsp Strawberry essence
  • 3 Eggs
  • 1 oz Milk
  • 1 Loaf cake tin lined with oil paper

Method

Mix flour and baking powder, seive together. Cream butter and sugar until fluffy. Add eggs one at a time and beat, add strawberry essence, fold the flour in and mix well. Line loaf tin and pour the batter into the loaf tin and prick few strawberry slices into the batter, arrange the rest of the strawberries on top and steam the cake for one hour.

 

 

Chocolate Strawberry Tart

Chocolate Strawberry Base Ingredients

  • 200gr Flour
  • 100gr Butter
  • 100gr Icing Sugar
  • 100gr Cadju Powder
  • 3tbs Cocoa Powder
  • 2 Eggs
  • 1tsp Vanilla Essence
  • 1/2tsp Salt

 

Method

  • Beat butter and icing sugar together, add one egg at a time and beat well. Seive flour and cocoa powder together, add salt, mix cadju powder and add into beaten butter and sugar mix. Mix well and make the dough.
  • Turn the dough on to a lightly floured surface, knead the dough, until smooth, wrap the dough and leave in a cool place for 15 minutes.
  • Roll the pastry on a floured baking paper and cut the pastry to 12”inch diameter and then place the pastry on a removeable 8”inch diameter tart tray and trim the edges; line the pastry with a baking paper and spread with raw rice and bake for 10 minutes; take off the oven, remove baking paper and rice, bake for further 10 minutes, remove from oven and cool.

 

Chocolate Strawberry Filling

Ingredients

  • 100gr  Cooking Chocolate grated
  • 100gr Butter
  • 100gr Sugar
  • 100gr Flour
  • 1tsp Baking Powder
  • 4tbs Strawberry jam
  • 2tbs Cocoa powder
  • 1 Egg
  • 2tbs Cadju powder

 

Method

Sevie flour, cocoa powder, baking powder together, place the cooking chocolate in a bowl over a saucepan of water, boil over low heat ( do not let the bowl touch the water) stir until the chocolate melts.Add butter, sugar, flour with cocoa powder, stir well. Add Strawberry jam, beat the egg and add into the chocolate mixture; stir well, add cadju powder and mix well, take off the fire, cool; mix well. Spoon the filling to tart cases, bake for 15 minutes at 190 C.

Decorate

  • Apply Strawberry jam over and dust with almond slices.
