Lemongrass and Ginger Crabs

Ingredients :

4 Crabs, clean and cut into two
2 tbs  Ginger chopped
2 tbs Garlic chopped
8 Red Chillies sliced
4 tbs Tomato sauce
2 Stalks Lemon grass sliced
2 tbs Lemon juice
1 tbs soy sauce
1 Egg beaten
1 tbs Sugar
10 Red dry chillies soaked in hot water
½  Cup Water
1 tsp Salt
6 tbs Oil

Method:

In to the clean and washed crabs, add salt , Lemon juice, tomato sauce, soy sauce and set a side for 10 minutes. Make into a paste, garlic, ginger, soaked red chillies and half the lemon grass. Heat oil and fry the ground paste and remaining lemon grass for 1-2 minutes. Add crabs, Sugar and mix. Pour water mix well cover and simmer for 8 -10 minutes, until the gravy is dry. Pour the beaten egg round the pan and cook. Mix with the crabs add sliced red chillies. Serve with Noodles or Rice. 

Spicy Beef Rendang


Ingredients :

750g Beef fillet sliced
2 Lemon grass stalks
1 Onion chopped
3 Kaffir  Lime leaves sliced
½  inch piece Galangal chopped
6  Cloves Garlic
8 Dry red chillies soaked in water
1 tsp Sugar
1 1/2 cups coconut milk
1 tbs coriander powder
½ tsp turmeric powder
1 tsp Salt
½  cup water
4 TBS Oil

Method:

Cut the meat into small pieces, add salt. Make a paste with garlic, galangal, soaked red chillies, Lemongrass, onion, kaffir lime leaves add water little at a time and set a side. Heat oil add turmeric powder, coriander powder and the paste,add half the coconut milk and beef, mix well. Cook over low flame for 30 minutes. Then open the lid, mix and pour the remaining coconut milk, cook for further 20 minutes untill  the gravy is dry, season with sugar and salt to taste.
