APPLE AND RHUBARB TART

Ingredients: 

150g Green apples (peeled and cut into ½ inch pieces)
100g Rhubarb (cut into ¾ inch pieces)
150g Sugar
2tbs Mixed Fruit jam
50ml Water
¼tsp Cinnamon Powder
1tsp Corn flour (mixed with one tbs. water)

 

Method:

Add sugar and water into a pan and boil for 3 minutes. Add the apples and cook for further 2 minutes. Then add rhubarb and cook for one minute. Add mixed fruit jam, cinnamon and corn flour mixture, thicken the filling. Fill the tart trays with apple mixture and bake at 1800C in a pre-heated oven for 8 minutes.

 

APPLE AND COFFEE TEA CAKES

Ingredients: 

1 green apple grated
50g raisins
100g flour
1 tsp. Nescafe mixed with 2 tbs. hot milk
1 egg
100g brown sugar
75g nuts
100g margarine
1 tsp. baking powder

Method:

In a bowl beat butter and sugar for 2-3 minutes until creamy. Add in the egg and beat well. Sieve flour and baking powder together and add into a bowl. Add nuts, raisins and grated apple and mix well. Add the flour mixture into the butter cream mixture and fold. Add Nescafe mixed with milk. prepare four lightly greased ramekins filled with the mixture, dust a little flour over and sprinkle chopped nuts and icing sugar over. Pre -heat the oven to 1800C for ten minutes and bake the ramekins for 25 minutes. Serve hot.
