From spiced European classics to sun-soaked tropical treats, the global Christmas table is a delicious reflection of culture, memory and joy. And among these seasonal delights, the Yule log remains an enduring favourite.

Sweet Traditions and the Magic of the Yule Log
Classic Chocolate Yule Log
Ingredients
For the sponge:
- 4 large eggs
- 100g caster sugar
- 65g plain flour
- 40g cocoa powder
- ½ tsp baking powder
- Pinch of salt
For the filling:
- 200ml double cream
- 1 tbsp icing sugar
- ½ tsp vanilla extract
For the icing:
- 150g dark chocolate
- 150g unsalted butter
- 200g icing sugar
- 2 tbsp cocoa powder
Method
- Preheat oven to 180°C (160°C fan). Line a Swiss roll tin with baking parchment.
- Whisk the eggs and sugar until pale and thick.
- Fold in the sifted flour, cocoa, baking powder and salt.
- Bake for 10–12 minutes.
- Turn out onto a sugared tea towel, remove parchment and roll while warm. Cool.
- Whip the cream with icing sugar and vanilla.
- Unroll, fill and re-roll.
- Melt chocolate and butter; beat in icing sugar and cocoa.
- Frost and texture with a fork; dust with icing sugar.
